(Google Adsense) Can I focus the ads for specific items and how is done?

In Google Adsense, can I focus the ads for specific items, and when done, is that done account wide (across multiple websites), or by selected channels?

I am hosting a hobbies website, and I want to know if I can specify if the channel I setup to be be good for hobbies and crafts?

Google selects ads that best match the content of each page, I assume by simple keyword matching though there might be more black magic latent semantic methods used as well.

I’m a little more hazy as to how Youtube ads are match4d, it could use your description for reference so talk it up.

You can block individual advertisers in your control panel to cut out annoying erroneous matches.
